In the seedling year, biennial plants resemble carrots, growing about 20 cm (8 inches) tall, with finely divided leaves and a long taproot. By the second year, 60 to 90 cm (2 - 3 foot) stalks develop , topped by umbels with pink or white flowers . These produce the seed, which is used as a spice. Plants that produce flowers and seed will die. Only plants that have not yet flowered will produce seed the following year.

Chestnuts roasted on the open fire, or in the oven, are one of the memorable aromas of the winter festivities. Delicious eaten alone, they can also be used in many seasonal winter dishes and desserts. Chestnuts look like your everyday nut, but are entirely different. Compared with other trees’ nuts, they contain a much lower fat content, which makes them healthy and suitable for calorie-controlled diets. And unlike many other nuts, they can be used in lots of culinary ways.
Chestnuts are important as a baking ingredient. They can be dried and ground into flour for making cakes, soaked in syrup and used as decoration for cakes and puddings or simply chopped into stuffing for poultry roasts. It can also be made into a purée and served as a traditional accompaniment to game. (more…)

Benefits of Flax seed in Heart Disease and Cholesterol Lowering.
Its high content of alpha linolenic acids has made the ancient flax seed become our modern miracle food. Alpha linolenic acid is a type of plant-derived omega 3 fatty acid, similar to those found in fish such as salmon. Benefits of flax seed as shown in many studies include lowering total cholesterol and LDL cholesterol (the Bad cholesterol) levels. Other benefits show that flax seed may also help lower blood triglyceride and blood pressure. It may also keep platelets from becoming sticky therefore reducing the risk of a heart attack.
Aside from alpha linolenic acid, flax seed is rich in lignan. Lignan is a type phytoestrogen (antioxidant) and also provides fiber. Researches reveal that lignan in flax seed shows a lot of promise in fighting disease — including a possible role in cancer prevention especially breast cancer. It is thought that lignan metabolites can bind to estrogen receptors, hence inhibiting the onset of estrogen-stimulated breast cancer. (more…)

New research on almonds adds to the growing evidence that eating whole foods is the best way to promote optimal health.
The flavonoids found in almond skins team up with the vitamin E found in their meat to more than double the antioxidant punch either delivers when administered separately, shows a study published in the Journal of Nutrition.
Twenty potent antioxidant flavonoids were identified in almond skins in this study, some of which are well known as major contributors to the health benefits derived from other foods, such as the catechins found in green tea, and naringenin, which is found in grapefruit.
“We have identified a unique combination of flavonoids in almonds,” said Jeffrey Blumberg, Ph.D., senior scientist and director of the Antioxidants Research Laboratory at Tufts University. “Further blood tests demonstrated that eating almonds with their skins significantly increases both flavonoids and vitamin E in the body. This could have significant health implications, especially as people age.” (more…)

Nuts have long-endured a poor image problem. People mostly worry that they’re too fattening and would feel much happier tucking into a bar of chocolate than a small bag of nuts. The truth is, though nuts are high in fat, they are also highly nutritious and packed with healthy energy and fibre.
Most nuts, excluding chestnuts, are rich in healthy fats, including essential fatty acids, which accounts for between 40-60 per cent of their weight. The fats in nuts are mostly super-healthy monounsaturated and polyunsaturated. They contain no cholesterol as nuts are harvested from plants. Only coconuts and palm nuts contain high levels of saturated fats, unhealthy fats that can lead to many health problems.
If you are worried that eating a small bag of nuts will make you fat, the evidence is that they can actually help you to lose cellulite. They are also proven to improve cardiovascular health. Now no chocolate bar can hope to do that.
Significant amounts of minerals can be found in nuts, including zinc, calcium, iron, phosphorus and magnesium. They also contain pro-vitamins and vitamins such as thiamine, riboflavin, niacin and vitamins E and C.
Nuts contain very little natural sodium and have a high amount of potassium, which is a recommended combination for the control of blood pressure. Unfortunately, nuts are often sold as salted snacks, which upsets this natural balance. To get the maximum health benefits from nuts, eat unsalted nuts in moderate amounts.
Here’s the nutritional low-down on the average nutritional content of the most popular nuts: (more…)
